I love pasta as much as the next person, but I'm on a reduced-carb intake... by choice... and 3 days in a row. .

My body is not happy..  and neither am I. Enough already! No more pasta!!!!

My son's journey

My son has struggled with his weight. This has been an issue of frustration in our house. We saw a new psych this week. She spoke with him about many things including his weight frustration. Tonight I took him out to dinner and his choices were amazing. I was proud of him. Then he brought food home. We went for frozen yogurt and he took a smaller portion than usual.... with less toppings. I hope this keeps rolling. I want to see him happy.

Lunch... junk food... cravings... and such

Lunchtime rolls around every day... for me... about the same time. By now, you would think that I would know what I will be eating... but... nope!

Today was yet another one of those days... cravings, but uncertainty... knowing what I want, but just can't justify the not-so-nutritional value... hungry, but not sure what for... it's the same cycle 5 of 7 days every week. Today I have a salad... actually two. Yes, healthy and nutritious... and I enjoy them, but I have things to do tonight... if I don't eat now, I might as well face the consequences.  I have to go to a "meeting" after work... after voting... and I am not sure when dinner will fit in... and munchies just doesn't cut it!

I broke down... I went to McDonalds.  My worse-case craving is the Big Mac. I know it's SOOOO bad for me, but if I only have once every month or so, I guess I might survive. This time though, I didn't go through the drive-thru and munch on fries all the way back to work... I went in, ordered my food, and sat down. I ate there. I took my time. I didn't have to eat while I worked. No one bothered me. I ate my sandwich, drank my soda, looked out the window, munched on fries (and by the way, when I ran out of ketchup, I stopped eating my fries!). I normally eat lunch at my desk and end up feeling like a stuffed critter by the time I am done. Today, I didn't feel that way... I guess it does help when you eat lunch AWAY from work.

Now I'm fine for another month or so...

Just when you thought...

On Fridays, my son and I go visit my buddy and we normally have some type of sloppy, not-the-healthiest, meal. It never fails though. If I eat lunch, figuring we are going to have junk for dinner, he ends up going to a friends house, we don't have an unhealthy dinner, and then I am left hungry. On the other hand, if I decided to do a sloppy lunch because I am hungry or having a craving, he stays home, we go out, and then I feel like hell. Just when you thought you had it figured out...

Lunchtime... I'm a nut case... admit it!

Okay, I am a nut case... gonna just have to admit it.

I sit here at my desk, as lunchtime rolls around.
I don't know what I want. Do I really need anything?
I really shouldn't spend the money. But I do have a few dollars till payday.
Where should I go?

I get in the car...
Do I want to run to the store or do fast food?
I am soooo craving a burger... I haven't had one in a while.
But then again, a burrito or nachoes sound really good too.

I don't know...
Maybe I will just go to the store and get a salad.
It's better than a burger.
I really shouldn't have the calories.
I really don't need the calories and fat.
The thought of how many drive me crazy.
I didn't check on line to see how bad the burger would be.
I can't just have a plain burger, but the calories will kill me.
I DON'T need them...
But that burger sounds so yummy.
I do have to eat something though.

I stop at the grocery store...
and get a salad...

And then I go back to work...
Same thing I have done the last three days...

Like I really needed to think about it...

I am such a dork!

Dinner

I don't mind having homemade dinners... something other than hamburger helper or Mac and cheese, but not when its overdone.


I don't understand why she needs to overcook everything. We had pork chops. They had a breading and then were cooked... overcooked. The outside was tough. I was not impressed. I just chewed and smiled. Yeah, okay, whatever.


I would rather go without than eat overdone food. I'm weird that way.


Don't scorch the hotdogs, don't overcook the pasta, don't make the meat tough, don't dry out the chicken, don't make French toast dry (yes, its possible), and don't overcook the scrambled eggs (also possible).


What a great day to end the day!

Guy fieri is my hero!

I am seriously addicted to Diners, Drive-ins, and Dives.

I love the show. Guy is awesome. He has such passion.

I wish I could cook. I mean, I can cook, but i am not creative. I would love to be able to cook fabulous food.

My brother loves to cook... and does it so well... my son likes to cook. I guess I got lost in the middle.

What a day....

I had a mtg at school to help my son with his learning teams. We discussed his cyber-bullying (the offender got in trouble, lost computer privileges and other stuff).


Then, we discussed the eating habits and body image. Oh lord, that was a tough one! Gramma feeds and buys all the comfort food and then complains about his weight.


Its a long, involved story and battle we have been fighting.


I think we addressed it. I'm not the enemy... we can do it. I love my son and want to see him succeed!!


I definitely need to go yo bed.  I'm exhausted!

Growing up, my least favorite meal was...



MAMA KAT'S WRITING PROMPT...
Growing up, my least favorite meal had to be stuffed peppers. Nothing is worse than soggy bell peppers, filled with meat. I guess the meat wasn't so bad, but the peppers... they left a lot to be desired. Soggy green peppers? Ick!
No wonder kids don't eat them cooked... too many of us ate them soggy and faded growing up.

I have been having this love affair with my new found favorite snack. Superpretzel Softstix filled pretzel bites. YUMMMMMMMM.........
I get a craving... I don't know if it's the soft pretzel or the gooey cheese, but together they rock!
Just give me the box and step back.
No one will get hurt.

sushi is...

I have found a love for sushi... I am not big on the things like eel or raw tuna, but shrimp and salmon is good. I like Cali wraps and like spicy crab and shrimp. Mix it with wasabi and soy. Even my son, who is a teen, loves this stuff. I can eat this every day...

Weight

My son faces the constant battle of big-bodied family. I have tried to teach him about eating healthy. It has been tough. He has suddenly had an enlightened moment. He has made the decision to log his foods, exercise more, and even plan a healthy lunch. He knows how to look at nutritional values, etc.

I am so proud of him and support his decision.

Eat me out of house and home

My son is a growing boy who has become a teenager. He eats dinner, but he also munches constantly. Tonight, it was dinner, and then hot cocoa, then a cheese sandwich. He doesn't like his body image. Overweight runs in our family, but it doesn't phase him. Then my mom is no better. She makes cookies constantly and then has a fit when he eats them all... Then don't make them. No one in our house needs them. Makes me mad. Then she is the first to throw a fit!
Any suggestion on how to address this?

Enough Cake... Please!!

Okay - three birthdays, two days! So much for the diet. And please, no more cake! Yesterday was cupcakes, brownies, and homemade chocolate cake. Today was a double chocolate bundt cake and pumpkin cream cheese bundt cake. Tonight was chocolate cake and chocolate ice cream! Okay - that's enough desserts to last me till next October! The "year older diet" will need to start tomorrow!

Easy California Spring Rolls

Crab (real or imitation)
Leaf Lettuce
Carrot matchsticks
Julienne Cucumbers
Avocado slices (optional)
Rice Paper Wrappers

First, for the wrappers, I have found two types. You need to check the ingredients to tell the difference. One is made primarily from a tapioca (which is typically sweeter, with a definite flavor) and the other is rice (these are thinner, more flexible, with little or no taste). From experience, I prefer the ones of mainly rice. (although they are slightly more expensive).

Wet the paper, as instructed (it will absorb water and get more flexible). These wrappers will get sticky, so making them on a plastic cutting board is suggested.

Layer the ingredients in the lower third, leaving room on the ends to wrap and tuck.

I usually lay a few baby spinach leaves and some spring greens. Head lettuce holds water and may be too bulky - leaf lettuce works well.

I then put down some crab, either a stick, or you can shred it up and lay it down.

Last, I pile on the veggies, laying them over the crab.

Roll carefully from the end, until it is rolled once and then tuck in the ends and roll the rest.

Ready to eat.

If you are going to put them in a dish for later, wrap each in a slightly damp paper town to keep them from sticking together.

Ready to go.

I either use a sweet chili sauce or Japanese spicy mayo to dip these in.

Sushi

How many 12-yr old kids eat Sushi? He wanted to go to a local restaurant. I took him. He chose the rainbow roll - seaweed, rice, raw tuna, avocado, and raw salmon. He LOVED it. OMG! I am thrilled. At 12, you have no fear and no pre-judgements. I fight the "texture" issue but he doesn't. He'll train me yet! :)
